Cheers Canada... I might have a dabble....
Saw that story of those two idiots in Yellowstone who picked up that Buffalo calf as they thought it looked cold... they drove to the Rangers and showed what they had in the boot of their SUV!! Poor fucker had it as by the time they got it back to it's herd they did not want to know it so it spent the next hour trying to headbutt cars... rangers shot it... that's what you get for trying to be helpful.

If so, yes.
Tons of flavour but really easy to cook wrong because it is lean. Burgers with about 60% bison and rest made up of something fattier are really good.

It is all about opinions (but I think patriotism and what you are used to comes into it as well) and there are people, chefs even, that say they prefer corn-fed consistency. I am not one of those people.
Maybe I phrased the "trading on old reputation" wrong. As far as I am aware, nothing has change and they are great. I just don't think what has made them have such a high reputation is that unique, especially now. It wasn't any different than what I grew up on or could get a local diner even.

all about opinions. I was there two years ago and didn't have a bad one, didn't have to go looking for it and pay through the nose. Talk to any butcher and he says only eat meat from cattle that is grass fed. You shouldn't have to go looking for it though, sad you have to and pay a premium as well
